12th October 2019 marks the opening of Verbena.  After all the acquired expertise gathered throughout the years, Manuel felt that it was time for a new milestone in his career – that of opening his own family-run restaurant. And here, we heartily welcome you to Verbena, where together we aspire our best to give our diners an unforgettable experience whilst tickling  taste buds through Manuel’s heavenly dishes.

Our Chef Patron

Manuel Schembri

Manuel commenced his career in 2003 at the age of 16, where he initially started working in Trattoria Santa Rosa situated in Mistra Bay. Later, he studied catering at ITS Malta between 2003 and 2006. Also, Manuel broadened his culinary knowledge when he attended 3 stages in foreign Michelin star restaurants namely, Belmond Le Manoir in Oxfordshire, Wild Honey and Hibiscus in Mayfair. After finishing his studies, he joined the Radisson Blu Golden Sands brigade as a commis chef and continued to grow and gain experience for 13 years, where he finally ended up leading the A` la carte outlets of this five star hotel, namely Agliolio  and Essence restaurants. Manuel took part in several local and foreign competitions, where he was even classified as the 3rd Best Mediterranean Chef.
